It's nice to have them, but nothing beats creativity and hard work. When you search for a recipe for a certain dish you'd like to try to cook, whether online or in a cookbook, sometimes you see ingredients which are either very hard to get (e.g. fruits out of season) or very expensive (e.g. those different types of cheese for Italian dishes). This is where your creativity would come in. Try out different ingredients, taste them and feel their texture. Every ingredient has a substitute, remember that. As for the appliances - hard work is what you need. Not only putting in hard work in doing what a machine could easily do for you in seconds, but also thinking how to make certain processes even easier for you. Just keep on practicing these substituting ingredients and perfecting cooking processes - and those would definitely pay off. You'll be cooking great dishes in no time. Creativity and hard work - that's what you would bank on for those home-made dishes that look like they've been cooked by one of those smooth-talking TV chefs. Sure they have all the fancy ingredients and appliances, but you can get around that. Besides, if you're cooking for your family, seeing them smile because of the food you cooked is a reward right there by itself.
