Bean is one of the most versatile food crops in Nigeria. Beans belong to the class legumes, and it is one of the staple foods in Nigeria; there are two types of beans: The first type is the brown variety which is further divided into 2 types: 1. Sweet type - also called Ewa Oloyin 2. Ordinary type The other type is the white variety which is mostly used to make some kinds of dishes, hardly any home in Nigeria would you visit and not find beans a part of the daily meal eaten by the family. It is truly a versatile crop. The first Nigerian recipe for today is Akara- bean cake, you can use either the brown or white variety in preparing this dish but people mostly use the white variety. Caution: When buying beans in the market, you need to be careful as most of the times they are infected by beetles and can turn the beans into powder in a matter of days or when used for this Nigerian recipe changes the taste and makes it unpalatable - so watch out and avoid them. INGREDIENTS: Depends on the number of people you are cooking for. Beans - 2 cups Onion - 1 medium size Rhodo {chili} - 6 Groundnut oil Maggi Salt METHOD: Soak beans in water for 1hr or overnight, wash and remove the skin. Add the Rhodo and Onion and grind at the local mill for a smooth paste or you can use your blender {but it really doesn't blend very well} Pour into a plastic bowl, and using a wooden spatula beat until fluffy or you can pour into a mortar and using a pestle turn in circular motion until fluffy like cake batter. If it is too much, you can refrigerate the remaining to use at a later date.
Slide 2: Scoop small quantity into a bowl, add the desired quantity of pepper, salt and magi but to be on the safe side, add a little at a time until your palette is satisfied with the taste of the batter before frying and be sure that the combination of the spices is just right. Mix the ingredients with the batter until thoroughly mixed. In a clean skillet pan, pour some groundnut oil and set on heat. Allow to heat up to some degree, scoop the mixture into the hot oil and fry till brown on top. Flip to the other side and fry till brown likewise. Remove from heat and drain. Serve with pap. PAP INGREDIENTS Millet, corn or guinea corn powder {depending on the type you want} Milk Sugar or honey METHOD Mix the powder of your choice with some water, pour water into a clean sauce pan and set on heat to boil. Add sugar or honey and milk as desired to the mixture and when the water boils, remove from heat and pour into the mixture until it solidifies. Use a spoon to turn and mix the content until you get a thick consistent mass, its ready. Enjoy with your bean cake and a refreshing drink. I hope you guys will find these Nigerian recipes useful.
