I made many cookbook purchases while Christmas shopping this past weekend, one being Betty Crocker Just the Two of Us, a collection of recipes scaled for two people. The recipes are convenient, almost too much, since it doesn't produce enough for leftovers which made me sad in the case of last night's dinner. I was really in the mood for something hearty and satisfying, but stews and soups are foods I can only really appreciate in cooler climates which, at averages in the high 70s, is not something we Floridians have been experiencing these past few days. Still, I decided to give it a try. The original recipe in the cookbook calls for thyme, frozen mixed vegetables and a few other minor ingredients that I didn't have on hand. But I had the chicken breast, defrosted and marinated. So I created my own version (for 2 servings): 2 chicken breasts (preferably already marinated or seasoned), cooked and cut into cubes (I sauteed mine with some garlic and poured the pans contents, fatty goodness and all, into the stew) 1/2 cup pancake mix 1 cup of chicken broth (either from the can or using a bouillon cube) 1 can of corn kernels About 4-6 small red potatoes 3 tablespoons of flour About 2 tablespoons of skim or fat free milk Season with your choice of rosemary or thyme (I just went ahead and used an all season mix since it had most everything I wanted) Mix the pancake mix in a small bowl with just a dash of salt, I over seasoned mine and think the dumplings are better plain in the stew. Set aside. Start boiling your potatoes for about 12-15 minutes or until just tender, you can strain the potatoes and set aside but reserve some of the starchy water which you may need later. Add the flour to a medium saucepan and gradually add the broth (or do what I did, which was pour it in way too fast and end up with clumps of flour. Simply strain out the clumps and keep going, perhaps adding flour if needed) bring to a rolling boil, whisking constantly, it'll start to thicken. Add the chicken, the canned corn (drained) and the potatoes. Lower the heat to simmer, stirring occasionally. At this time, you may want to add the water from the potatoes which will make your stew more soupy. Now it's time for your dumplings, add the milk to the pancake mix and stir until it forms a dough that's only slightly sticky. Create spoonful sized balls and drop into stew. Season to your liking but a word of caution, chicken broth is pretty salty as it is so I'd stick with dashes of seasoning. Simmer covered for about 10 minutes, then another 5-10 minutes uncovered. Don't forget to sprinkle some crushed crackers on top! Now go eat it!
